Long time ago, I read this blog post by @neven on switching to cooking with induction (Can’t seem to find it… but it stuck with me!)

… then about a year ago, I learned that I could just… lift our gas cooktop out, have an electrician run a short 240v wire, and then plop in an induction cooktop. They’re standard sizes!

So nice to not have gas affecting indoor air quality, it’s faster at cooking - and you can easily wipe it down. Plus, when it’s off, it’s just… usable counter space!

@bryanjclark Woo! And how cool is the trick you can show people where you put a pan of water on there, turn it on, and see bubbles forming instantly? Ours boils water for tea quicker than I can grab a cup and a teabag.

@bryanjclark how granular are the temp controls on the ge’s, i got an lg one and its an annoying 1-8 with a turbo on each burner, i think i need something like 1-20 especially when it comes to simmering or frying, but i still prefer it to what we had previously (danger coils). wish we hadn’t had to buy this range during peak supply chain season, it made choices a lot tighter than they needed to be

@bryanjclark “Flour, Water, Salt, Yeast” is the kinda bread book that just “gets” my engineer brain.

It’s incredibly precise, but if you follow the instructions it’s pretty much impossible to screw up your bread.

@bryanjclark i have two large “burners” but there is no way to have both set to the same “temp” (ditto for the small ones) this is also because also how they are paired to deal with power draw issues so it’s just not possible to have any two burners behaving identically

@bryanjclark how’s the griddle?!? i was bummed that the fancy ge we ordered got canceled because that is a feature i would also use (i want to be able to cook mini potatoes and carrots in two separate 1qt pots at the same temp roughly for the same amount of time, for instance). does the griddle heat pretty uniformly or does it let you set a gradient across the griddle?

when i was a line cook i had two free standing induction burners that had an analog knob but it went from 0-100 with steps in between and the effect was extremely like using a magical gas burner when you have that resolution but the behavior of induction
