I’m thinking about making a Basque Cheesecake for a party in a couple of weeks - it would be the gluten free option. Does anyone have a favorite recipe for this? Or any advice? I am fine at regular cheesecake, but i heard this version is amazing, and if i can make it gluten free that is even better

https://www.seriouseats.com/basque-cheesecake lists flour in the ingredients but I’m failing to see at what step it’s added.

A few other options definitely include flour. Any wisdom on whether i can swap for a gluten free flour?

@ansate You sift the flour over the batter in step 4. It’s to absorb moisture and increase firmness. I bet you could skip it or use a different starch instead. https://cooking.stackexchange.com/questions/64430/what-does-flour-do-to-cheesecake

@ansate I haven't tried making it, but I found it funny that the website for an incredibly famous flour brand has this recipe... which contains no flour...

@b0rk @ansate also made this one last fall and threw some puréed pumpkin and spices in, it was really forgiving (agree with others you could probably use some gluten free flour, i feel like the eggs did a lot of the work)
